  • After making sure the eggplants are cooked, In the case of grilling them, it is necessary to carefully remove the burnt skin of the eggplant and put the eggplants in a separate container. Then, using a fork or a meat grinder, crush the eggplant and set it aside.
  • In the next step, it's time to grill the tomatoes; Of course, depending on your taste, you can only grill the eggplant and boil the tomatoes. After you are sure the tomatoes are cooked, remove them from the stove and let them cool down. Then carefully remove the skin of the tomato and mash or grate it with a meat grinder like an eggplant.
  • At this stage, it is time to mix the ingredients. First, pour the oil into the pan and let it heat up a bit; Meanwhile, grate the garlic or chop it finely and put it in the pan. Fry the garlic until it turns golden and after some time, add turmeric to it.
  • While roasting garlic and turmeric, it's time to add crushed eggplants. Fry the eggplant and garlic together until all the ingredients are uniform. Note that this stage should take about 15 to 20 minutes to fry the eggplant.
  • At this stage, it is time to add tomatoes and paste. At first, add tomatoes to the ingredients and fry until the tomato juice evaporates. Then, according to your liking, fry the tomato paste in a separate pan until its raw smell disappears and its color changes. Then add tomato paste to your ingredients and mix them together.
