Tomato Stew Recipe
This dish is one of the dishes of Gilan province in Iran, which is very similar to a tomato omelet. Tomato stew can be served with bread or rice.
Ingredients for four people
- Tomato 10
- Garlic 5
- Egg 5
- Salt 2 tsp
- Ground black pepper 1 tsp
- Turmeric 2 tsp
Tomato Stew Recipe
- Peel and dice the tomatoes. It will leak some liquid but do not take them off. Then puree the tomatoes in a food processor.
- Peel the garlic cloves and grate them finely. Put a pan on the heat and add two tablespoons of oil. Then sauté the grated garlic and turmeric in oil over medium heat until its aroma is released.
- Crack the egg into a large mixing bowl. Then beat them together until they get frothy.
- Add the beaten eggs to the garlic, stir them a little bit and let them cook. You want a puffy mixture.
- Put another pan on the heat and coat it with oil. Then pour the pureed tomato and bring it to a simmer. Let the tomato juice evaporates. Then add salt and ground black pepper and sauté for a while.
- Now add the eggs to the tomatoes and let them cook uncovered for 10 minutes. That is it! Plate this delicious stew in a suitable dish and serve with olive, Torshi, and rice or bread. Enjoy your meal!
