 Spinach and Yogurt Dip Recipe

Spinach and Yogurt Dip (Borani Esfenaj) is a classic Persian appetizer that is usually served with crusty bread, pita, lavash bread, or crackers. Borani means yogurt-based dishes, and this delicious dip has a lot of spinach and garlic and is something you do not want to miss! It is a perfect dish that can be made in advance. 

Ingredients for eight people

  • Spinach 1 kg
  • Greek Yogurt (or any thick yogurt) 500 g
  • Garlic 2
  • walnuts 4 tbsp
  • Salt 2 tsp (or to taste)
  • Ground black pepper 1 tsp (or to taste)

Spinach and Yogurt Dip Recipe

Wash the spinach and put it in a container full of water for 10 minutes. Then rinse the spinach and place it in a colander to drain the excess water. After the spinach is drained, transfer it to a tray and finely chop it.

Peel and wash the garlic cloves and finely chop or grate them. If you are a garlic lover, you can add up to six cloves of garlic to this delicious appetizer.

Place a suitable pot on heat and add chopped spinach and garlic. Then add a pinch of salt and black pepper to the spinach and sauté until the spinach wilt down and its excess water evaporates. Then set them aside to cool down.

Add yogurt, salt, and black pepper to a large mixing bowl and mix well until the yogurt consistency becomes thinner.

Coarsely chop the walnuts by rocking the blade of a knife. Add the spinach mixture and chopped walnuts to the yogurt and mix well until it is completely uniform. Finally, pour it into small bowls and put it in the refrigerator until it cools down. You can also serve it at room temperature. Garnish it with fried onion, rose petals, and parsley leaves. Serve it as an appetizer for your parties, and enjoy!
